The Recipe
Ingredients
- 250g mince
- 1/2 onion, finely chopped
- 1 carrot, chopped
- 3 baby marrows, chopped
- 1 tablespoon Olive Oil
- 1/2 can Koo all-purpose tomato
- 2 beef stock cubes
- 1 cube tomato paste maker (or 2 teaspoons tomato paste)
- 1/2 cup beer
- 2 cloves garlic, crushed
- salt to taste
- pinch of origanum
- pinch of marjoram
- pinch of parsley
- pinch of dried basil
- black pepper to taste
- 1l boiling water
- 250g pasta of your choice (i usually use macaroni, or tagliatelli, or elbow macaroni, or penne)
- grated cheddar cheese to sprinkle over the top.
Methodology
- Pre-heat the oven to 180°C.
- In a mediumish pot, add the boiling water, 1/2 tablespoon of olive oil, and salt. When that, in turn, is boiling, bring to the boil.
- Add the pasta, stir through with a wooden spoon, and leave to cook until the pasta is al dente
- In another medium pot, bring 1/2 tablespoon olive oil with the onions to a medium heat. (Don't wait for the oil to heat before adding the onion, as the onion then tends to cook too quickly and may end up a little burnt.)
- When the onions are glassy, add the mince and brown it off.
- Add the all purpose tomato, the beer, the tomato paste-maker and beef stock. Leave to simmer for about 5 minutes.
- Add the carrot, the baby marrow, the garlic and the herbs and spices.
- Drain off the pasta and spread along the bottom of a pyrex or marinex dish.
- Pour the mince over the top.
- Sprinkle with cheese, and place in the oven to bake for 30 Minutes.
