Beery Mince Lasagne

The Recipe




Ingredients

  1. 250g mince
  2. 1/2 onion, finely chopped
  3. 1 carrot, chopped
  4. 3 baby marrows, chopped
  5. 1 tablespoon Olive Oil
  6. 1/2 can Koo all-purpose tomato
  7. 2 beef stock cubes
  8. 1 cube tomato paste maker (or 2 teaspoons tomato paste)
  9. 1/2 cup beer
  10. 2 cloves garlic, crushed
  11. salt to taste
  12. pinch of origanum
  13. pinch of marjoram
  14. pinch of parsley
  15. pinch of dried basil
  16. black pepper to taste
  17. 1l boiling water
  18. 250g pasta of your choice (i usually use macaroni, or tagliatelli, or elbow macaroni, or penne)
  19. grated cheddar cheese to sprinkle over the top.


Methodology

  1. Pre-heat the oven to 180°C.
  2. In a mediumish pot, add the boiling water, 1/2 tablespoon of olive oil, and salt. When that, in turn, is boiling, bring to the boil.
  3. Add the pasta, stir through with a wooden spoon, and leave to cook until the pasta is al dente
  4. In another medium pot, bring 1/2 tablespoon olive oil with the onions to a medium heat. (Don't wait for the oil to heat before adding the onion, as the onion then tends to cook too quickly and may end up a little burnt.)
  5. When the onions are glassy, add the mince and brown it off.
  6. Add the all purpose tomato, the beer, the tomato paste-maker and beef stock. Leave to simmer for about 5 minutes.
  7. Add the carrot, the baby marrow, the garlic and the herbs and spices.
  8. Drain off the pasta and spread along the bottom of a pyrex or marinex dish.
  9. Pour the mince over the top.
  10. Sprinkle with cheese, and place in the oven to bake for 30 Minutes.
